Please be sure to wash your weekly share thoroughly before serving. To preserve freshness, it is NOT ‘table ready’ (i.e., pre-washed). We deliver your Olin-Fox Farms’ produce right from the fields to ensure highest quality.

This Week's News From The Farms

Despite the current weather, this week's share is a very nice one, in comparison to the last. As we had hoped, the snow receded and the sun peeked through the clouds, just long enough to make it possible to harvest a number of the field crops.

Greenhouse production required some extra attention and heat, and also did well for this week's shares. And, we were able to obtain the organic citrus and some carrots from a local distributor.

So, enjoy, and think of sunshine and warmer weather for the last delivery of the Winter Program March 17-20.

As we stated earlier, we are making sure you get your money's worth from our CSA program now and in the future. Looking ahead to 2011, we are re-assessing the Winter Program after two hard winters. We are adding more greenhouses, more cold-hearty crops, more cold frames and hoop houses in the fields, as well as pursuing our own canned and possibly baked goods. We truly believe a four-season program is necessary for the survival of small family farms, so we can all continue to eat locally.

Savoy Cabbage

Savoy Cabbage is believed to have originated in Italy, or more precisely the ‘Savoy’ region, which is on the border of Italy, France and Switzerland, a former duchy of some historical significance. The earliest record of this variety dates back to the early 1500s.


Winter Cabbage Salad – thanks to CSA Member Zeno
Combine ingredients below:
Shredded cabbage
Chopped cilantro
Minced serrano pepper to taste
One heaping tablespoon of mayonaisse
Freshly squeezed lime juice
Salt & pepper to taste


Oriental Cole Slaw – thanks to CSA Member Nan

Serves 4-5 as a side dish.


1 Green or Red Savoy Cabbage, chopped cole slaw style and set aside

3 Green Onions with tops, chopped and set aside


¼ cup butter

3/8 cup sliced almonds

½ package ramen noodles, crumbled (discard seasoning packet)


Melt butter in pan. Brown almonds and noodles, remove from pan and set aside until cooled.


Combine and blend well:

3/8 cup Salad Oil

¼ cup Vinegar

¼ cup Sugar

1 tablespoons soy sauce


Combine all items immediately before serving.
